From a small hillside vineyard at the Rutherford home of Carol and George Biel comes the 2008 Hillstone Cabernet. In 2004 and 2005 less than 4 barrels of "Hillstone Vineyard" were produced, exclusively for the Biel's Hillstone Restaurant Group. In 2006 and 2007, production increased, but in 2008 yields were down and availability is again very limited. Planted in 1993, the vines at Hillstone Vineyard are rooted in cobbly, light loam soils, terraced on a steep, west-facing slope in Rutherford. 100% Cabernet Sauvignon aged in new French oak, the 2008 Hillstone is saturated with blackberry fruit, cedar and sweet oak spices and café mocha. Fleshy, dense and round as black fruit compote, the wine is laced with baker's chocolate and supple tannins.

Wine Spectator

A gorgeous wine, aromatically complex and riveting, with mocha, dried berry, currant, sage, cedar and espresso notes. Full-bodied, plush and then firming, allowing the flavors to push through, adding depth and dimension. Drink now through 2022. 180 cases made.
